Covid Cafe: Key Lime Pie Redemption (with recipe)


Hello chefs of Covid Cafe. Thank you for your recent submissions, which we'll get to just as soon as we let Rob redeem himself...
 

Rob writes: after the epic fail, I was determined to eek out a decent key lime pie.  It’s just a matter of respect. When you fail, you get back on the horse and up your game.

Redemption Key Lime Pie is the result, made using the correct recipe, courtesy of Shaw's Crab House in Chicago. 

Who would ever think 3 1/4 cups of citrus could possibly make a pie curd?  After my research I figured that I now had the right proportions in the new recipe and proceeded with purpose.

SHAW’S CRAB HOUSE KEY LIME PIE
One 9-inch pie
Preparation time: 30 minutes
Cooking time: 20 minutes
Chilling time: 4 hours

Graham cracker pie crust:
2 cups graham crackers crumbs
1/4 cup sugar
1/4 cup ground almonds
6 tablespoons melted unsalted butter

Filling:
Grated rind of 4 limes, about 1 teaspoon
Juice of 4 limes, about 9 tablespoons (if Kkey limes are used, more than four limes may be needed. If Persian limes are used, three may be sufficient.)
3 whole eggs
3 egg yolks
3/4 cup plus 2 tablespoons sugar
1 cup (2 sticks) unsalted butter

1. Heat oven to 350 degrees. For crust, combine ingredients in 9-inch pie pan. Press over bottom and up sides of pan. Bake until crisp, about 8 to 10 minutes. Let cool on wire rack.

2. For filling, mix lime rind, lime juice, whole eggs, and egg yolks in top of double boiler. Stir in sugar. Cook over a simmering water until eggs thicken like hollandaise sauce, about 8 to 10 minutes. Do not boil. Remove from heat. Add butter and stir until melted.

3. Pour mixture in the pie shell. Let it come to room temperature, then refrigerate for 4 hours.
