Covid Cafe: Cottage Cheese Pancakes

Hello, chefs. I'm not sure why it is that Holly loves cottage cheese pancakes as much as I do, but one glance at her photo might convince you to try them. Because I avoid fast carbs, I use the Diet Doctor recipe (here), which contains psyllium husk fiber in place of flour. Any way you flip them, these are beautifully topped with fresh berries.

Holly writes: These are super easy and yummy! Oatmeal flour is good, too.

Cottage Cheese Pancakes
Ingredients
1 cup cottage cheese
1/3 cup all-purpose flour
2 tablespoons vegetable oil
3 eggs, lightly beaten

Directions
Combine cottage cheese, flour, oil, and eggs in a large bowl.
Heat a large skillet over medium heat, and coat with cooking spray. 
Pour 1/3 cup of batter onto the skillet and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
