First organic tomatoes

Hello, chefs. I'm not sure why it is that Holly loves cottage cheese pancakes as much as I do, but one glance at her photo might convince you to try them. Because I avoid fast carbs, I use the Diet Doctor recipe (here), which contains psyllium husk fiber in place of flour. Any way you flip them, these are beautifully topped with fresh berries.

Cottage Cheese Pancakes
Ingredients
1 cup cottage cheese
1/3 cup all-purpose flour
2 tablespoons vegetable oil
3 eggs, lightly beaten
Directions
Combine cottage cheese, flour, oil, and
eggs in a large bowl.
Heat a large skillet over medium heat, and coat
with cooking spray.
Pour 1/3 cup of batter onto the skillet and cook until
bubbles appear on the surface. Flip with a spatula, and cook until browned on
the other side.
