Covid Cafe: Homestyle Saag Paneer

Our friend Lee returns today with a rich and satisfying dish, what she calls "my sort of saag"... 
Lee writes: I cube and brown tofu (protein) with the onion, garlic, sliced peppers, and ginger. Add spinach and mushrooms with coconut milk and all curry-type spices and salt. Add potato cubes if the body needs some bulk to feel happy. Cook it down, using arrowroot to thicken. Add micro-greens on top for fresh crunch.
